Dal Roti (Lentils & Whole Wheat Bread)



Dal roti is a high protein and healthy Tiffin. Mostly I use left over Dal for making this roti.I learnt this recipe from my friend from Punjab. You can convert a left over dal in to quick tiffin. Good source of protein for veggie lovers.

Ingredients:
1.Whole wheat flour - 2 cup
2.Mung dal(Mung beans)/Chana dal(Split chick peas)/Tuvar dal(Yellow pigeon peas) - ½ cup
3.Red chili powder - 1 tsp
4.Cumin powder - ½ tsp
5.Coriander powder - ½ tsp
6.Cumin seeds - ½ tsp
7.Oil - 1 tsp (for Dal preparation)+ Enough oil for roasting Roti
8.Pinch of Asafoetida powder
9.Salt to taste

Method:

Dal(Lentil) Preparation:

1.Wash dal and cook in water till tender.
2.Mash the cooked dal and keep aside.
3.Heat oil in a pan. Add cumin seeds ,let it splitter.Add a pinch of asafoetida
4.Add mashed dal to the pan.
5.Add all the masalas(Red chili powder, coriander powder and cumin powder) to the dal. Add salt to taste.
6.Let it boil for 3 minutes and switch off the stove.
7.Keep aside and let it cool.



Dal Roti preparation:

1.Mix wheat flour and prepared dal in a bowl. Sprinkle some water if needed and knead in to soft pliable dough.
3.Add a tsp of oil and rub it to the dough.
4.Make equal sized soft balls of 2 inch diameter from the dough.
5.Spread the dough balls in to a 6 to 7 inch diameter circle .Use flour for dusting for to avoid sticking .
6.Heat Griddle(Tawa) .Spread some oil in Tawa.
7.Place Roti on Tawa and roast.
8.Brush some oil on roti. Flip to roast the other side.
9.Serve hot with spicy pickle and yogurt(Curd).

Soya balls and Peas Gravy

Ingredients:

1.Soya balls - 15
2.Peas - ½ cup
3.Tomato - 1 large chopped
4.Onion - 1 large chopped
5.Cumin seeds - 1tsp
6.Red chili powder - 1 tsp
7.Turmeric powder - 1 /4 tsp
8.Garam Masala - 1 tsp
9.Oil - 2 tbsp
10.Salt to taste
11.Coriander leaves (for garnishing) - 1 tbsp chopped

Method:

1.Boil 2 cups of water. Add soya balls to the boiling water. Add some salt.
2.Cook till the Soya balls are tender.
3.Switch off the stove and let it cool.
4.Take soya balls from the water and squeeze it with hand to press out the absorbed water from it.
5.Cut the soya balls in to small pieces and keep aside.
6.Heat oil in a pan.Add cumin seeds, let it splitter.
7.Add 1 tbsp of finely chopped onion to the pan and fry till translucent.
8.Add Peas and soya balls and saute for 2 minutes.
9.Add Turmeric powder,Red chili powder and Garam Masala and saute for 2 minutes.Sprinkle some water and cook.
10.In the mean time saute the remaining onion and tomato in a separate pan in 1 tsp of oil.Cool for some time. Grind it in the blender(Mixer grinder) with little water.
11.Add this onion and tomato mixture to the vegetables and cook for 5 minutes.
12.Garnish with coriander leaves.
13.Serve with Chappathi ,Nan and Bread toast.

Palak Dal (Spinach & Lentils Gravy)

Ingredients:

1.Mung dal(Mung beans) - 1 cup
2.Spinach - 1 cup
3.Onion - 1 Medium
4.Tomato - 1 Medium
5.Turmeric powder - ¼ tsp
6.Red chili powder - 1 tsp
7.Mustard seeds - ¼ tsp
8.Cumin seeds - ¼ tsp
9.Urad dal - 1 tsp
10.Whole Red chili - 2
11.Oil - 4 tsp
12.Pinch of Asafoetida powder
13.Salt to taste


Method:

1.Chop the vegetables.
2.Wash dal and cook in water till tender. Keep aside.
3.Heat 2 tsp of oil in a pan.
4.Add onion and saute till translucent. Add Tomato and saute for a minute.
5.Add spinach to the pan and sprinkle some water. Cook for 5 minutes.
6.Add cooked dal to the vegetables.
7.Add Red chili powder, Turmeric powder and salt to taste.
8.Cook for 5 minutes.
9.In a separate pan heat 2 tsp of oil.
10.Add Mustard seeds, cumin seeds ,Urad dal and Whole Red chili .Allow Mustard seeds and cumin seeds to splitter. Add a pinch of Asafoetida in the last.
11.Add this to the Dal mixture.
12.Serve hot with Rice,Chappathi and Roti.

Palak Chappathi

Ingredients:

1.Wheat flour - 2 cup
2.Palak(Spinach) - 1 cup
3.Red chili powder - 1 tsp
4.Salt to taste



Method:


1.Chop spinach nicely.
2.Mix Red chili powder and salt to wheat flour.Then add spinach and combine gently.Sprinkle some water and knead in to soft pliable dough.
3.Add a tsp of oil and rub it to the dough.
4.Make equal sized soft balls of 2 inch diameter from the dough.
5.Spread the dough balls in to a 4 to 5 inch diameter circle chappathi.Use flour for dusting for to avoid sticking .
6.Heat Griddle(Tawa) .Spread some oil in Tawa.
7.Place chappathi on Tawa.Roast chappathi.
8.Brush some oil on chappathi.Flip to roast the other side.
9.Serve hot with yogurt(Curd).

Mixed Veggie Soup

Ingredients:


1.Mixed vegetetables(Carrot,Beans,Green peas,Cabbage) - 1 Cup
2.Onion - ½
3.Tomato - 1
4.Oil - 1 tsp
5.Butter - 1 tbsp(Optional)
6.Corn flour - 1 tbsp

Method:
1.Heat oil.Add onion ,saute for a minute.
2.Add all the vegetables .Add water to cover the vegetables. Add some salt.
3.Cook the vegetables.
4.Gently dissolve corn flour in 2 tbsp of water .Add to vegetables and allow it to boil
till it thickens to right consistency.
5.Add pepper to taste.
6.Garnish with coriander leaves and top it with some butter.
7.Serve hot.

Strawberry Banana Smoothie

Ingredients:

1.Strawberries - 8
2.Banana - 1
3.Ice cream(Vanilla or strawberry flavor) - 1 scoop
4.Milk - ½ cup
5.Sugar to taste



Method:

1.Chop Strawberries and banana roughly.
2.In a blender(Mixer grinder) blend the fruits together with Ice cream and milk.
3.You can use fresh flavored yogurt(Curd) instead of Ice cream and milk.
4.Generally sugar is not required for this smoothie. If you need add some sugar to the smoothie and blend it.
5.Serve chill.

Tomato Rice

Ingredients:


1.Rice - 1 cup
2.Tomatoes - 4 large
3.Onion - 1 large
4.Green chilli - 1 slitted
5.Red chili powder - 1 tsp
6.Turmeric powder - ¼ tsp
7.Garam Masala - 1 tsp
8.Oil - 2 tbsp
9.Coriander leaves - 2tbsp
10.Salt to taste
11.Mustard seeds - ¼ tsp
12.Channa dhal (Split Chick Peas) - 1 tsp



Method:

1. Cook the Rice and spread it in the pan to cool so that the grains are separate
2.Cut tomatoes and onions in to small pieces.
3.Heat oil in a pan.Add Mustard seeds and channa dhal.Let Mustard seeds splitter and Channa dhal becomes golden brown.
4.Add Onion and saute till translucent, then add Green chili saute for a minute.
5.Add tomatoes,then Red chili powder,Turmeric powder and salt.Saute for 5 minutes.
6.Cover the pan and cook. Sprinkle water and cook till tomatoes are done.
7.Add Garam masala and cook for 5 minutes.
8. Swich off the stove and let it cool.
9.Spread the cooked tomatoe mixture in to the rice and mix evenly.
10.Add some salt if required.
11.Garnish with coriander leaves.

Carrot Kheer

Ingredients:

1.Carrot - ½ kg
2.Milk - 1 litre
3.Sugar - 100g
4.Cardamom - 3
5.Ghee - 1tsp
6.Nuts(Cashews, Badam) for garnishing


Method:

1.Peel off the carrots and Grate the carrots.
2.Boil milk. When the milk boils simmer the stove , Stir Occasionally.Do this for 10 minutes.
3.Add the grated carrots to the milk. Cook the carrots in the milk. Stir occasionally.
Keep the stove simmer.This will take about 20 minutes.
4.Add Sugar and crushed cardamom. Cook for 5 minutes.
5.Fry Crushed nuts(Cashews and Badams) in Ghee and garnish the Kheer.
6.Refrigerate and Serve chill.

Spinach Dosa (Spinach Pancake)

Ingredients:

1.Rice(Raw rice or Para boiled) - 1 cup (Soaked for 2 to 3 hours)
2.Spinach - 1 cup
3.Red chilies - 4 to 5
4.Cumin - 1 tbsp
5.Asafoetida - 1/4 tsp
6.Salt to taste


Method:

1.Drain the rice.
2.Grind it along with spinach,Cumin,Red chili,Asafoetida and salt.
3.The batter is in dosa (Pancake batter)consistency.
4.Heat the Tawa or Griddle.
5.Pour some batter in the center and spread it to a circle.
6.Drizzle some oil around dosa.
7.Cook one side and flip to cook the other side.
8.Serve hot with Onion chutney or Coconut chutney.

Onion Chutney

Ingredients:

1.Red onions - 3 large
2.Red chilies - 4 to 5
3.Tamarind paste- 2 tsp
4.Urad dhal - 2 tsp
5.Mustard seeds - 1 tsp
6.Oil - 2 tbsp7.Salt to taste

Method:

1.Chop the onions.
2.Keep 1/2 onion aside.
3.Grind the onions along with Red chilies,Tamarind and salt in to a fine paste.
4.Now add the rest of the onion to this and grind coarsely.
5.Heat oil in a pan,add Mustard seeds ,when it splitters add Urad dhal.
6.Add grinded mixture in this and saute till the onion do not smell raw.
7.Serve with Idli or Dosa

Ginger Chutney

Ingredients:

1.Ginger - 100 g
2.Red chilies - 3 to 4
3.Tamarind - 1 tsp
4.Coconut - 2 tbsp (grated)
5.Urad dhal - 1 tsp
6.Oil - 1 tbsp
7.Salt to taste



Method:

1.Peel off the skin from Ginger.Slice it to pieces
2.Heat oil in a pan.saute Ginger till browned ,remove it from the pan.
3.Add Urad dhal in the same pan,saute until it becomes golden brown.
4.Add red chilies saute for few seconds.
5.Remove from heat and allow it to cool.
6.Grind all the sauted ingredients along with coconut ,tamarind and salt to a chutney consistency.

Tomato Soup

Ingredients:

1.Red ripe Tomatoes - 4
2.Red chili powder - 1/4 tsp
3.Corn flour - 1 tbsp
4.Salt and pepper to taste
5.coriander leaves - 2 tbsp(chopped nicely)
6.Sugar - 1/4 tsp
7.Butter - 1/2 tbsp to serve

Method
1.Puree the tomatoes.
2.Strain the puree through a sieve.
3.Heat the strained puree in a vessel.Add Red chili powder.
4.Add corn starch dissolved in water and allow it to boil,till it thickens to a right consistency.
5.Add pepper to taste.
6.Add a pinch of sugar to it.Generally sugar is added in spicy dishes to elevate the taste.
7.You can also add a tbsp of Tomato ketchup instead of sugar.This also brings a good flavourto the soup.
8.Garnish with coriander leaves and top it with some butter.
9.Serve hot with crackers(salt Biscuits).

Spinach Soup

Ingredients:
1.Spinach - 2 cups
2.Onion - 1
3.Tomato - 2
4.Cumin - 1 tsp
5. Corn flour - 1 tbsp
6. Oil - 1 tbsp
7. Pepper powder to taste
8.Salt to taste


Method:
1.Chop the Onion ,Tomato and Spinach nicely.
2.Heat oil in the pan, Add onion, Saute onion until translucent.
3.Add tomato and saute for 2 minutes.
4.Add spinach.Now add enough water to cover the vegetables.Add salt to taste.Cook for 5 minutes.
5.Add 2 tbsp of water with corn flour .Mix thoroughly.
6. Add the corn flour and water mixture to the vegetables .Boil for 2 minutes.
7.Add the pepper powder to taste.
8. Adjust the consistency by adding water.
9.Serve hot.

Mor Kuzhambu(Butter Milk Gravy)

Ingredients:
1.Butter Milk - 2 Cups
2.Onion - 1
3.Okra(Ladies finger) - 6 (Optional)
4.Red Chili powder - 1 tsb
5.Turmeric powder - ½ tsb
6.Garam Masala - 1 tsb
7.Coriander Powder - 1 tsb
8.Coconut - 3 tbsp (grated)
9.Red chili - 2
10.Mustard seeds - 1 tsb
11.Cumin - 1 tsb
12.Coriander leaves - 2 tbsp chopped
13.Cuury Leaves - few
14.Asafoetida
15.Urad dhal
16.Oil - 2 tbsp
17.Salt to taste


Method:
1.Blend Butter milk,Red chili powder,Turmeric powder,Garam Masala, coriander powder and coconut with salt in a Blender (Mixer grinder).Keep aside.
2.Chop onion nicely.Cup Okra(Ladies finger) cross wise in circles.
3.Heat oil in the pan. Add Onion ,saute for 1 minute. Add Okra, saute until okra do not smell raw and okra is cooked , about 8 minutes.
4.Add the blended Butter milk mixture to the pan, cook for 5 minutes.
5.Heat oil in a separate pan.Add Mustard seeds, let it splitter then add cumin,urad dhal and red chilliand Asafoetida and curry leaves.Add this in to the pan.
6.Garnish with coriander leaves.
7.Serve hot with Rice or Chappathi or Roti

Masala Chai (Spicy Ginger Tea)

Ingredients:
1. Low fat milk - 2 cups
2. Ginger - 1 inch (grated or crushed)
3. Cardamom - 2 crushed
4. Tea powder - 2 tsb(depends on type of Tea you have)
5. Sugar to taste


Method:
1.Heat the milk. If you like to have a thinner tea, you can add some water. Generally I use Milk and Water in the ratio 2 :1
2.Reduce the flame. Add Tea powder, Ginger and Cardamom. Boil for some time.Longer the time you heat, stronger the tea.
3.Filter the tea.
4.Serve hot with Biscuits.

Bread and Mixed vegetables Uppma

This is a healthy snack and you can make quickly.A delicious way to add more veggies to kids. Sometimes I use left over vegetable poriyal for Bread Uppuma.

Ingredients:
1. Bread slices : 8
2. Carrot : 1
3. Capcicum : 1
4. Cabbage : 100 g
5. Peas : 50 g
6. Beans : 5
7. Onion : 1
8. Tomato : 1
9. Red chili powder : 1 tsp
10. Garam Masala : 1 tsp
11. Oil : 2 tbsp
12. Coriander leaves : 1 tbsp
13. Salt to taste
Method:
1. In the blender (Mixer grinder) grate the bread pieces in to bread crumps.
2. Grate the carrot and chop the remaining vegetables nicely.
3. Heat oil in the pan.Add onion, saute until it become translucent.
4. Add the remaining vegetables and saute for 5 to 8 minutes.
5. Add red chili powder,Garam Masala and salt.Cook for some time.
6. Now add the bread crumps and saute for 1 minute.
7. Garnish with coriander leaves.
8. Serve hot with Tomato sauce.

Adai Avial

Adai(Rice and Lentil Pancake):

Ingredients:
1. Para boiled rice (Raw rice can be used too) - 2 cups
2. Dhal (lentils) - 1 cup combination of Toor Dhal(Yellow lentils) , Moong Dhal(Yellow mung beans)
and Channa Dhal(Yellow split chickpeas)
3. Red Chilies - 6 to 8
4. Curry leaves - few
5. Asafoetida - ¼ tsb
6. Red Onion - 1 chopped nicely
7. Salt to taste
8. Oil


Method:
1. Soak rice and dhal(lentils) separately atleast for 2 hours.
2. Grind rice along with red chilies,salt and Asafoetida coarsely.
3. Grind Dhals very coarsely.
4. Mix rice and dhal batters along with curry leaves and onions. This batter will be thick.
5. Heat the tawa or griddle.
6. Spread some oil in tawa(griddle).
7. Place some batter in tawa .Spread them to a circle.
8. Drizzle some oil around the adai.
9. Cook(Roast) it in Medium heat.
10. Flip to cook(Roast) the other side.
12. Serve hot with Avial.
13. Adai can also be served with curd or butter and jaggery.


Avial (Mixed vegetables and coconut stew):

Ingredients:
1. Mixed vegetables - 2 cups (choice of vegetables :Carrot, French Beans, Potato, Brinjal(Egg plant), Drum stick, White Pumpkin and plantain)
2. Coconut - 5 tbsp(grated)
3. Green chili - 2 to 3
4. Curd (Yogurt) - ½ cup
5. Cumin - 1 tbsp
6. Curry leaves
7. Mustard seeds - 1 tsb
8. Oil - 1 tbsp
9. Salt to taste


Method:
1. Cut the vegetables into 1.5 inch pieces.
2. Cook the vegetables with little water in a pan.(You can cook the vegetables in the stove top or you can use microwave oven too).Add some salt to the vegetables.
The vegetables should not be mushy, should be slightly crisp on the outside.
3. Blend the coconut, green chili and cumin with little water in a Blender(Mixer grinder)
4. Add the blended mixture in to the cooked vegetables. Cook for 3 minutes .
5. Switch off the stove. Mix curd(yogurt) to Avial.
6. Heat the oil (generally coconut oil is used) in a separate pan. Add mustard seeds , let it splitter ,then add curry leaves. Add this to the Avial.
7. Serve hot with Adai .

Cream of vegetable Soup

Ingredients:

1. Onion - 1/2 (chopped)
2. Carrot - 2
3. Beans - 8
4. Potato - 1
5. Broccoli or Cauliflower florets - 4
6. Garlic cloves - 3 (Chopped nicely)
7. Green chili - 1
8. Tomato - 1 large
9. Coriander leaves - 2 tbsp
10. Oil (vegetable/Olive) - 1 tbsp
11. Low fat milk - 1 cup
12. Vegetable stock/Water - 1 1/2 cups
13. Pepper for seasoning
14. Salt to taste

Method:

1.Heat the oil. Add Onion and then Garlic. Saute until Onion become translucent.
2.Then add all the vegetables, sauté for 5 minutes.
3.Now add vegetable stock or water and salt. Cook until vegetables become soft. Let it cool for some time.


4.In the blender(Mixer grinder), puree the cooked vegetables with milk coarsely.
5.Return the puree to the pan and heat for some time(not boiling).Add pepper and some salt to taste.Add milk or water to adjust the consistency.
6.Garnish with coriander leaves.
7.Serve with toasted bread slices or crackers(salt biscuits).

Carrot Rice

This is a healthy and delicious food .Great for packing to lunch. My husband is a great fan of this rice.

Ingredients:

1. Rice - 1 cup
2. Carrot - 3 (grated)
3. Green chili - 2 (slitted lengthwise)
4. Onion - 1 (chopped nicely)
5. Red chili powder - 1 tsp
6. Turmeric powder - ¼ tsp
7. Garam Masala - 1 tsp
8. Coriander leaves - 2 tbsp (chopped)
9. Salt to taste



Seasoning:

1. Mustard seeds - ½ tsp
2. Cumin - ½ tsp
3. Channa dhal - 1 tbsp
4. Oil - 2 tbsp


Method:

1. Cook the Rice and spread it in the pan to cool so that the grains are separate

Aloo Palak (Potato in Spinach Gravy)


Ingredients:

1. Spinach (Palak) - 2 cups
2. Potato - 2 large sized
3. Green chili - 2
4. Onion - 1 large (chopped nicely)
5. Tomato - 2 Medium
6. Ginger - 1” piece (grated)
7. Red chili powder - 1 tsp
8. Garam Masala - 1 tsp
9. Cumin - ½ tsp
10. Lemon Juice - 1 tsp
11. Oil - 2 tbsp
12. Salt to taste
13. Butter - ½ tbsp (optional)

Method:
1. Cook the spinach with little water in a pan. Cover the pan and cook for 2 minutes on high. Let the spinach cool for some time.
2. Add the cooked spinach, Green chili and salt in a mixie.Grind it slightly coarse. Keep aside.
3. Boil the potatoes .Peel off the skin and cut it in to medium pieces.Keep aside.
4. Heat the oil. Add cumin ,when it splitters add grated ginger and onion. Saute until onion become translucent.
5. Puree the tomatoes. Add the tomato puree and saute for 2 minutes.
6. Add the chili powder and garam masala.
7. Add the potatoes and saute for 1 minute.
8. Now add the palak(Spinach) and cook for 2 to 3 minutes.
9. Add the lemon juice.
10. Heat the butter and pour over the gravy just before serving
(Optional)

Serve hot with Roti, Naan, Parantha or Rice

Preparation time : 45 minutes
